1 C chopped almonds

Divide dough in several parts, taking about 1/2 tsp dough and roll in hands to form crescents. Bake on un-greased cookie sheet
Bake at 400 for about 10-12 min until slightly golden
When done, let cool on cookie rack. Then roll in xxxx sugar (sifted)

Peanut Blossom Cookies
1 3/4 C sifted flour
1/2 tsp salt
1/2 C Crisco
1/2 C brown sugar
1 tsp vanilla
1 tsp baking soda
1/2 C peanut butter
1/2 C Sugar
1 egg
1 pkg chocolate candy kisses
Shape dough into balls using a rounded tsp for each. Roll balls into sugar and place on greased baking sheet. Bake at 375 for 10 minutes. Remove from oven. Top each cookie with a candy kiss, pressing down firmly so cookie cracks around edge. Return to oven; bake 2 - 5 minutes, until golden brown.

Iced Fruit Drop Cookies

Nutty Coconut Frosting
1/3 C sugar
1/3 C milk
2 tbs plus 1 tsp butter or oleo
1 egg yolk

1/2 C chopped walnuts or pecans
Combine first 5 ingredients in top of a double boiler. bring water to a boil. Reduce heat to low; cook, stirring in coconut and walnuts; beat until mixture reaches spreading consistency.
Yield: Enough frosting for a 9" cake

1 pkg white cake mix

1 carton sour cream (8 oz)
1 tsp vanilla
Filling Mixture:

2 tsp cinnamon
Mix together
Beat for 2 minutes only. Use half the batter in pan. The sprinkle filling mixture over batter in pan. Put remaining batter over top and marble.
Using 10" tube pan. Let stay in pan for 30 minutes before removing.
Bake at 350 for 60 minutes
When cooled and removed from pan, place on cake plate and sprinkle with xxxx sugar.

1 C Sugar
4 tsp cinnamon
1/2 to 1 stick butter
Cream butter and sugar, add eggs and cream until fluffy. Add vanilla, flour, salt, milk. Set aside.
Butter bottom of 8" square pan. Set cake mix in pan. Place apple slices close together in row over cake mixture. Then sprinkle cinnamon and sugar over the apples. Dot with butter and bake.
Bake in oven at 325 for 45 minutes or until done.
Cool and serve plain or with whipped cream or ice cream

Snackin Chocolate Chip Cake
1 pkg devil food cake mix
1/4 C oil
2 eggs
1 1/4 C water
1 pkg chocolate instant pudding
1 Chocolate chips
Preheat oven to 350
Pour oil into 13x9x2 pan. Swish oil in pan until bottom of pan is covered with oil. Put remaining ingredients into pan and stir with a fork until blended. Scrape sides and spread batter evenly in pan. Bake for 35-45 min. Done when toothpick comes out clean.
May sprinkle top with xxxx sugar
Cut and serve from pan

June's Raw Apple Cake
2 eggs

4 C diced apples with skins
1 C nuts - broken
Pinch of salt
Beat eggs and sugar together, add vanilla, milk, dry ingredients, and oil. Mix well, fold in apples and nuts. Frost and refrigerate.
Frosting: 1 1/2 cups xxxx sugar, 6 oz cream cheese, 3 tbs butter, little salt and vanilla. Sprinkle nuts on top if desired
Tip - You can also shred apples on a grater. I find its much faster and works just as well as the diced.
Bake at 350 for 45 minutes

maraschino cherry halves
Whipped Cream
Preheat oven to 350
Melt butter in a 13x9x2 pan. Sprinkle brown sugar evenly in pan. Arrange cherry halves on the sugar mixture. Mix cake as directed on the label with 1 1/3 cups water. Beat as directed. DO NOT SUBSTITUTE PINEAPPLE JUICE FOR WATER.
Pour batter over fruit. Bake for 50 minutes. Let stand 5 minutes for topping to begin to set. Then turn upside down onto a large platter or cookie sheet.
Serve warm with whipped cream.

Have jello made (dissolve jello in 1 cup hot water). Cool while cake is baking. Pour jello over hot cake. Refrigerate cake for several hours.
When cake is cool, add topping as follows: Put berries in blender for about 3 minutes. Fold into the cool whip. Spread evenly on cake and return to refrigerator.

Combine all ingredients, mix and beat 4 minutes. Pour 2/3 batter into pound cake cake pan. Sprinkle a mixture of 2 tbs brown sugar 2 tsp cinnamon. Pour on remaining batter.
Serve while warm or glaze with 2 cups xxxx sugar and about 3 tbs milk

Lemon Jello Cake
1 pkg yellow cake mix
1 pkg lemon jello
3/4 cup apricot nectar
4 eggs
Combine all ingredients in a mixing bowl. Beat 4 egg yolks and add to mixture. Beat 4 egg whites stiff. Add to mixture and beat until smooth, then bake for 45 minutes at 350 in a greased and floured tube pan.
Topping
1 cup xxxx sugar
1/4 cup lemon juice
Brush on cake while hot. Let stand until cool and run a knife around the edge

Apple - E - Spice Cake
2 tbs sugar
1/2 tsp cinnamon
2 cups canned sliced apples- drain and reserve liquid
1 pkg yellow cake mix
1 cup liquid (see below)

1 tsp cinnamon
Grease 10" bundt or tube pan and sprinkle with mixture of 2 tbs sugar and 1/2 tsp cinnamon. Drain apple slices; add enough water to liquid to make 1 cup. In large bowl, blend dry cake mix. 1 cup liquid, 3 eggs, and 1 tsp cinnamon until moist. beat as directed on package. By hand, stir in drained apple slices. Pour into prepared pan. Bake at 350 for 35-45 minutes.
Cool upright in pan for 15 minutes. Remove from pan and cool.

In a large bowl add:

Blend to mix the add to bran mix
You can store in an air tight container in refrigerator for up to 6 weeks
Bake in muffin tins, at 425 for 10-15 min

Joans Corn Bread

Lipton Sun Tea
Put 3 lipton family size bags in a gallon jar filled with cold water.
Set outside in the sunshine for 3-4 hours
Serve over ice
NOTE: Vary the number of tea bags and the duration of brewing time according to preferences

Crab Dip
1 lb crab meat
1 can she-crab soup or shrimp soup
1 large pk of cream cheese
1 can cream of mushroom soup
Beet cheese until smooth and soft. Add soups a bit at the time and blend well. Then add the crab meat.

8 tbs soy sauce
1 tsp celery salt
1/2 tsp hot sauce

1pkg pretzel sticks
1 large can of peanuts
Pour sauce over dry ingredients toss till everything is coated
Bake at 259 for 45 minutes. Toss well every 15 minutes while cooking

Who is Joan?
Joan is my fabulous mother-in-law! She raised six kids and a husband :) Susan has a dilapidated cook book that Joan made for the kids years ago (hand typed on a typewriter) and it is falling apart. I thought it would be nice to save her recipes so they are handy to anyone who might want them and were not privileged to get a copy of her book the first time around! She as a TON of recipes so this will be time intensive- bear with me!
