Velma's Apple Bread

1 cup oil
3 eggs
2 cups sugar OR 1-1 1/2 cup apple juice
1 tsp vanilla
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
3 C flour
1 C chopped nuts
3 C diced apples w/skins

Mix well and bake at 350 for about 45 minutes
