June's Raw Apple Cake

2 eggs
3/4 C Milk
2 cups sugar
2 tsp soda
1 tsp vanilla
2 tsp cinnamon
2 C flour
4 C diced apples with skins
1 C nuts - broken
Pinch of salt

Beat eggs and sugar together, add vanilla, milk, dry ingredients, and oil. Mix well, fold in apples and nuts. Frost and refrigerate.

Frosting: 1 1/2 cups xxxx sugar, 6 oz cream cheese, 3 tbs butter, little salt and vanilla. Sprinkle nuts on top if desired

Tip - You can also shred apples on a grater. I find its much faster and works just as well as the diced.

Bake at 350 for 45 minutes
