Funnel Cakes

2 eggs, beaten
1 1/2 cups milk
2 cups flour
1 tsp baking powder
1/2 tsp salt
2 cups cooking oil

In a mixing bowl, combine eggs and milk. Sift together flour, baking powder, and salt. Add to egg mixture and beat well.

In an 8" skillet heat oil and pour batter into funnel. Hold end of funnel close to the surface of the oil. Hold finger under funnel until you pour your batter in. Release finger and moving funnel in a circular motion or spiral pattern. Fry until golden brown about 3 minutes. Turn and cook 1 min more.

Drain on paper towels and sprinkle with xxxx sugar or hot maple syrup
